What is an Instant Pot?

An Instant pot is a multi function cooker that saves energy and time in your kitchen. My Instant Pot is one of the first models the company sold, and has settings for:

  • Soup
  • Poulty
  • Meat/Stew
  • Bean/Chili
  • Rice
  • Multigrain
  • Saute
  • Porridge
  • Steam
  • Slow Cooker
  • Manual
  • Keep Warm

Newer models have settings for yogurt, cake, eggs, and sous vide.

Many people are nervous about cooking with a pressure cooker because of horror stories they’ve heard of (or maybe experienced themselves) of pressure cookers exploding. Instant Pot has several built in safety features that prevent this from happening. You can put your ingredients in the pot, set it to cook, and walk away until it is done!

In addition to being safe to use, they cook foods quickly and with much less power than cooking on the stove top. And, they don’t heat up the kitchen in the summer time!

Which Instant Pot should I buy?

Instant pots come in a few different sizes. The 6 quart Instant Pots are the most common, and that is the size that I use. Most recipes published online and in cookbooks are developed for this size pot.

There are 3 quart Instant Pots designed for smaller batches of cooking. If you purchase a 3 quart pot, you will probably have to cut most recipes in half to fit in the pot. I don’t recommend getting the 3 quart as your main Instant Pot. They are handy, however if you are traveling or living in a dorm room. They are also useful as a second pot for tasks like cooking rice while your main dish is cooking in the larger pot.

The company now also makes 8 quart Instant Pots. This could be useful if you have a very large family.

What do vegans cook in Instant Pots?

Instant pots make meal prep quick and easy! You can make big batches of grains and beans (without soaking!) and eat them throughout the week, or store them in the freezer. Then use them in soups, stews, casseroles, salads, and bowls.

Soups, stews, and chili are favorites and cook much quicker in the Instant Pot. You can steam veggies, make seitan, cook pasta, make desserts, and with some models make yogurt.

I’ve gathered together some of my own favorite vegan Instant Pot recipes, along with some that I’ve gathered from around the web. They are all oil free and many are gluten free. You’re sure to find some recipes listed here that you’ll love!
