This Potato and Herring Salad recipe, akaKartoffel und Heringsalat, comes from my Mutti's handwritten cookbook. She usually made it as one of her party buffet recipes.

As well, she often made this traditional German food as a special treat for our summer picnics. To differentiate this salad from potato salad, Mutti would add slices of pickled red beets.

Mutti's Potato and Herring Salad Recipe – Kartoffel und Heringsalat (4)

The resulting pink-colored herring salad became her trademark. I used to think it was her special way of making this salad special. It wasn't till I was older and had traveled to Germany that I realized adding beets to herring and potato salad was normal.

Which herring to use ...

Use pickled herring that's sold in jars. Drain well and cut the herring into smaller pieces. If onions are in the jars, chop these and add to the salad as well.

Ifthe pickled herring you've bought still has the back-bones in it,you'll need to remove this. Just cut along the back-bone and pull theflesh away from it.

You'll find a different version of the herring salad recipe minus the potatoes as Heringsalat,a great treat that my kids loved when they were little. Sweet and sourand creamy, too! Herring recipes that kids would love. Who would believethat?

FAQs

How to keep potatoes from falling apart when making potato salad? ›

The key is to allow the potatoes to dry and become cold before you make the salad. If you cut hot, boiled potatoes, they tend to crumble. If you wait until they had time to dry (may I suggest laying them out on a plate or casserole dish during this time) and cold, they cut nicer.

How to make potato salad Martha Stewart? ›

Why don't you peel potatoes for potato salad? ›

There's no reason at all, so my advice is to leave the skins on. The skin on a potato adds a nice texture and flavor to the potato salad and it's also the healthiest part.

Should you rinse potatoes in cold water after boiling for potato salad? ›

In most cases, yes. Rinsing them in cold water cools them so they're a closer temperature to making the potato salad, which you'd want cold. On the other hand, if you're making red potatoes and going to make German potato salad, I'd rinse them in lukewarm water. Th...…

5 Mistakes to Avoid When Making Potato Salad
  1. Using The Wrong Type of Potato.
  2. Not Starting The Potatoes in Cold Water.
  3. Cooking Potatoes in Unseasoned Water.
  4. Undercooking or Overcooking The Potatoes.

Should you cool potatoes before making potato salad? ›

If you want your potato salad to be a little thicker, starchier, then don't rinse the starch away, but spread the potatoes out on a baking sheet to cool and make sure you drain them out of the boiling water just before you think they are perfect.

What is the best type of potato to use for potato salad? ›

Russet, Yukon Gold, or red potatoes (new potatoes) are all excellent for potato salad. They do cook at different rates so be sure to adjust cook time depending on which type of potato you select.

Is it better to boil potatoes whole or cut up for potato salad? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

Should you wet potatoes before peeling? ›

According to the Centers for Disease Control and Prevention (CDC), at a minimum, potatoes should be rinsed under running water before cutting. This is crucial, even if you plan on peeling them, because germs on the outer skin can infiltrate the inside of your spuds when you cut them.

Why is my potato salad gummy? ›

The starch in potatoes is held together by pectin. When that pectin breaks down too quickly in the boiling process, mushy potatoes result. Adding vinegar to the water fixes that problem because, as López-Alt explains, “pectin breaks down much more slowly in acidic environments.”

What makes homemade potato salad watery? ›

Potatoes can retain moisture. To prevent this, drain the potatoes very well in a colander or pot. Allow all the steam to escape the potatoes before mixing them with the dressing and other ingredients.

Is potato salad junk food? ›

While the starchiness of the dish and some unhealthy ingredients prevent potato salad from being considered a "health food," its egg and vegetable content certainly provide several health benefits.

How to fix hard potatoes in potato salad? ›

I just made a potato salad, and I undercooked the potatoes- they are semi hard...and I aready mixed everything together, is there anything I can do to fix it, without throwing it out? Microwave it for about 30-40 sec until they soften how you like them. Make sure to refrigerate after and cool before eating.

How do you cook potatoes so they don't fall apart? ›

Most often, then, the solution to evenly cooked potatoes is cooking them twice: First, boil, steam, or steam-roast (a fancy term for cooking them with water in the oven) until they're mostly tender but not fall-apart finished. Second, brown the outsides and finish cooking the interiors on the stovetop or in the oven.
