A Chicken Fricassee Recipe is a one-pot French chicken stew. Made of humble ingredients like onion, mushrooms, potato and chicken, cooked in silky white wine sauce. A delicious comfort food made in just one pot or a skillet.
My girls and my hubby love this chicken stew. As for me, I enjoy trying out new dinner recipes from different countries like France. This Chicken Fricassee is super delicious and I would recommend you to give it a try!
Ingredient you will need to make Chicken Fricassee Recipe:
- 5 golden potato, peeled and cubed
- 2 tablespoons olive oil
- 4 chicken drumsticks, skin removed
- 4 boneless and skinless chicken thighs
- salt and pepper, to taste
- 2 tablespoons all-purpose flour
- 4 oz white mushrooms
- 1/2 large onion, finely chopped
- 2-3 garlic cloves, minced
- 1/2 teaspoon dry rosemary
- 2/3 cup white cooking wine
- 1 1/4 cup chicken broth (I used homemade chicken broth)
- 1 bay leaf

How to make Chicken Fricassee Recipe:
Step One
In a large cooking pan, heat 2 tablespoons of olive oil over medium-high heat. Season chicken with salt and pepper on both sides. Dust chicken with 2 tablespoons of flour then add to the pan.
Step Two
Cook each side for about 3 minutes or until both sides are browned. Transfer to a plate.
Step Three
Add chopped onion to a pan. Cook stirring few times for about 2 minutes, or until softened.
Step Four
Add 5 peeled and cubed golden potatoes, 3 minced garlic cloves, 4 oz white mushrooms, and 1/2 teaspoon dry rosemary, stir and cook for about 2 minutes. Pour 2/3 cup white cooking wine, bring it to a boil and cook for 1 minute. Add 1 1/4 cup chicken broth and bring it to a boil.
Step Five
Place chicken back to the pan. Add bay leaf. Cover the pan and simmer for about 50 minutes or until chicken is tender. Season with salt and pepper, if needed. Serve with my favorite homemade bread. Enjoy!
